Fats Oils and Grease Program (FOG)

The Town of Bayfield will be implementing a Fats, Oils, and Grease program beginning January 2023, see Resolution 522.  

Key points of the program:

  • Log book of two years’ worth of inspection/maintenance records of the grease collection device retained by establishment
  • To maintain compliance for the 25% rule(the total depth of the floating grease layer plus the settle-able solids layer cannot exceed 25% of the total liquid depth of the Grease Collection Device)
  • For Best management practices refer to the Restaurants Association or call Bayfield Town Hall at 970-884-9544
  • No liquid temperatures over 150 degrees into the collection system
